- Walnuts, chopped
- Almonds, sliced
- Shredded coconut, medium flakes
Preheat oven to 375 degrees.
In a large bowl, mix 2 cups flour, 1 cup sugar, 1 teaspoon baking powder, 1/4 teaspoon baking soda, 1 teaspoon salt and 1 teaspoon each of your favorite dry co-star ingredients.
In a small bowl, mix together 1 large egg, 5 tablespoons of butter, 3/4 cup milk (I chose a mix of creamy cashew and soy, but any kind of milk will work), 1/2 cup orange zest, 1/3 cup orange juice and a splash of maple syrup.
Add wet and dry ingredients above and stir until combined.

Gently fold in your nutty ingredients; 1/4 cup of each. Be creative with your nutty selections! Some fun additions that have worked well are blueberries, chopped apple pieces, or mini banana chunks.
Pour batter into greased pan. Finish the loaf by topping carefully with your favorite fruits, like thinly sliced banana or sweet orange slices. Dust with cinnamon, ginger, and brown sugar.
Bake for approximately 55 minutes until golden brown. Your toppings should be lovely and caramelized.

Baking time will vary depending on your selection of ingredients, so double-check readiness with the toothpick method (poke your loaf with a toothpick and make sure it comes out clean).

Cool for at least 15 minutes before serving.
