Crack eggs into medium bowl, adding salt and pepper. Whisk eggs until yolks and whites are well-blended but still show slight separation.

Heat a large-lipped pan and coat liberally with olive oil. Ensure the oil is well-heated and moves easily across the pan before slowly pouring half of the egg mixture into the pan. The eggs will cook quickly. Manage the process by allowing the bottom layer of the eggs to cook briefly and shift the mixture until 90% cooked through.

Move the mostly-cooked eggs into a separate bowl and repeat the process for the remaining eggs. The purpose of the dual process is to allow for even, quick cooking and preventing overcooking the eggs in this initial phase. If you use less eggs or have a pan with a larger surface area, you may not need to repeat the process.

Clean the same pan briefly with water and a paper towel, removing eggy residue. Heat a splash of olive oil to saute minced ginger, garlic, and sliced peppers over a medium flame for approximately 2 minutes. Sprinkle salt and pepper.

Add fresh tomatoes and mix vegetables together. Gently stir vegetables frequently to ensure even cooking.

The tomato skin will start to wilt off the tomatoes as they begin losing their firm shape. Stay by the flame and flip tomatoes regularly for about 5 minutes. Add salt for taste. The goal is to achieve very soft tomatoes while simultaneously bringing out the natural juices from the vegetables, creating a delicious sauce for your dish.

At this point, add eggs back into the mix to finalize the dish. Mix ingredients, cooking for an additional 1-2 minutes to ensure eggs are done.

Finish with a handful of freshly chopped scallions and delight in this dish with a side of rice.

Helpful hint for noodle lovers: if noodles are your carb selection for the day, just add in a cup of water at the very end of this recipe, simmer for a few minutes, and you’ll be graced with an easy brothy sauce to perfect your desired dish. Serve over noodles and enjoy!
